I should note that pastuerization kills taste-making bacteria too.

Also none of the recalls since I've been a buyer have been for raw milk cheeses. Yet the FDA does not warn against fresh, high moisture pasteurized cheeses even though they are more suceptible to post-production contamination than raw milk cheese is.
