This is such a beginner's cheese question, but is there a (legal) reason for the "food" in "cheese food"? Is there some kind of definition of the cheese-becoming process that rules out that which is -food and -wiz?
Cheez Whiz must by law be not more than 40% whiz and contain at least 15% cheez. I'm not sure what the rest of the stuff is in there. Maybe dongz or bugz or ratz.

Processed American Cheese Food is liquified cheese that has been emulsified through additives and often has gums. It has almost no expiration date and is still America's most innovative cheese achievement.

I kinda thought it was pre-cheese, sort of how mac n' cheese cheese will be milk plus enzymes or whatever, but will never have been cheese before you mix it up and that maybe "cheese food" only "becomes cheese" in your stomach. But that wouldn't make any sense. It's actually post-cheese! But by "has gums" I trust you don't mean a part of the human mouth, but like xantham or whatever.

The ones I have are cute, and I'm only uploading one bus picture. I swear to god, I take so many bus pictures. Every time we get on the bus, I take about 15 pictures.
Oh, and we get on the bus together about four times a week on average, and I get on the bus approximately 12 times per week on average. Fortunately, I restrain myself when I am on the bus alone. Although I used to take a lot of self-portraits on CalTrain.
It was a 2 1/2 lb brick that she carved with a butter knife and a parmesan knife (the small triangular bladed thing sitting on the plate with the sculpture). This was her first time carving cheese but I think she may have found her calling.

That cheese sculpture reminds me of when I used to subscribe to "Electric Company" magazine in the early 80's & the November issue one year had a food sculpture (mostly veggies) that looked just like Garfield. I thought that was the best thing of all time, but this cheese sculpture is really amazing!
